  • Food toxicology - Prof. Monia Perugini - a.a. 2016/2017

    Prof. PERUGINI MoniaDr. Monia Perugini has a degree cum laude in Veterinary Medicine at the University of Teramo and is full researcher (S.S.D. VET 07, Veterinary Pharmacology and Toxicology) in the Faculty of Veterinary Medicine of the University of Teramo since 2005. PhD in Veterinary Pharmacology and Toxicology. She is author ofmore than 50 scientific publications edited in national and international reviews or in proceedings of national and international congresses. She focused her researches in the field of environmental pollutants(PCBs, OCs, heavy metals and PAHs)and ecotoxicology, with a particular attention totoxicological and safety problems for fishery products.The presence of pollutantsin fish was evaluated both as contaminants and as consequence of food technologies like smoking process. Actually she is doing biomonitoring studies by using bees and related products as indicators of environmental contamination. Dr. Monia Perugini collaborated also to research projects with MIUR, MIPAF and University funds.She is also reviewer for "Environment International", "Environmental Pollution"since 2006,"Meat Science" and "Estuarine, Coastal and Shelf Science" since2007 and Fresenius Environmental Bulletin since 2008.
     

    INFO ABOUT THE COURSE

    OBJECTIVES OF THE COURSE

    • Knowledge and understanding: To provide insight in the type of items being an issue of safety concern in modern food safety evaluation. Application of this insight in understanding the relative importance of the various items in the field of food safety.
    • Applying knowledge and understanding: This course deals with the (potential) toxicity of toxic substances present in traditional and novel foods and their safety assessment. Special emphasis will be given to novel scientific developments in the field of agicultural chemicals, persistent organic pollutants, food additives and veterinary drugs.
    • Making judgements: Be able to discuss on food safaty assessment.
    • Communication: Be able to summarize the obtained insights and to express the importance of the lessons learned for their own scientific work and future career.
    • Learning skills: On successful completion of the course, students should:
      • have obtained knowledge and an overview of major existing and newly emerging items of concern within the field of food toxicology and food safety assessment.
